Pineapple and Mango Rum Cocktails

All you need for this sweet, refreshing rum cooler are three ingredients: Pureed fresh mangoes, pineapple juice, and golden rum make an irresistible tropical cocktail. Our mango rum drink recipe serves six, but you can easily double it by making a big batch of the puree ahead of time—this way, you'll be party-ready when guests arrive. Simply add the puree to each glass, then top with ice and pineapple juice. That's it! The finishing touch is a garnish of sliced tropical fruit (we like star fruit, dragon fruit, or mango).

Ingredients

  • 2 ½ small ripe mangoes, peeled and cubed (about 2 cups), plus ½ mango cut into slices with skin, for garnish

  • 4 ounces best-quality golden rum

  • 4 cups fresh pineapple juice (from a 4 ½-pound pineapple)

  • Fresh tropical fruit, such as dragon fruit and star fruit, for garnish

  1. Puree mangoes, rum, and water:

    Puree mangoes, rum, and 1/2 cup water in a blender.

  2. Divide puree between glasses and top with ice and pineapple juice:

    Pour 2 ounces of the puree into each of six 12-ounce glasses. Fill glasses with ice, and top off with pineapple juice. Garnish with tropical fruit.
